High amounts of beta-carotene, vitamins C and E, and zinc in the diet may help stave off age-related macular degeneration (AMD), a leading cause of blindness in the elderly, new research suggests.

AHA: Eat a variety of foods daily from all the basic food groups:

  • six or more servings of breads, cereals, pasta and starchy vegetables
  • five servings of fruits and vegetables
  • two-to-four servings of fat-free milk, low-fat dairy products
  • up to six cooked ounces of lean meat, fish, poultry

    What is lycopene?

One antioxidant in particular has received a lot of attention from researchers in recent years. Lycopene is a pigment that gives vegetables and fruits, such as tomatoes, pink grapefruit and watermelon, their red color. It also appears to have strong antioxidant capabilities. Several studies suggest that consumption of foods rich in lycopene is associated with a lower risk of prostate cancer and cardiovascular disease.

    Where do I find lycopene?

Lycopene is not produced in the body, so you can only obtain its benefits by eating foods rich in lycopene. Tomato products, such as spaghetti sauce, tomato juice, ketchup and pizza sauce are, by far, the major sources of lycopene in the typical American diet.

    What is selenium?

Selenium is a trace mineral that is essential to good health but required only in small amounts. Selenium is incorporated into proteins to make selenoproteins, which are important antioxidant enzymes. The antioxidant properties of selenoproteins help prevent cellular damage from free radicals.

    What foods provide selenium?

Plant foods are the major dietary sources of selenium in most countries throughout the world. The content of selenium in food depends on the selenium content of the soil where plants are grown or animals are raised. Animals that eat grains or plants that were grown in selenium-rich soil have higher levels of selenium in their muscle. In the U.S., meats and bread are common sources of dietary selenium. Some nuts are also sources of selenium.

    Vitamin A: What is it?

Vitamin A are fat-soluble compounds that play an important role in vision, bone growth, reproduction, cell division, and cell differentiation (in which a cell becomes part of the brain, muscle, lungs, etc.). Vitamin A helps regulate the immune system, which helps prevent or fight off infections by making white blood cells that destroy harmful bacteria and viruses.

    What foods provide vitamin A?

Retinol is found in animal foods such as whole eggs, milk, and liver. Most fat-free milk and dried nonfat milk solids sold in the US are fortified with vitamin A to replace the amount lost when the fat is removed.

    Vitamin E: What is it?

Vitamin E is a fat-soluble vitamin that exists in eight different forms. Alpha-tocopherol (a-tocopherol) is the name of the most active form of vitamin E in humans. It is also a powerful biological antioxidant. Vitamin E in supplements is usually sold as alpha-tocopheryl acetate, a form that protects its ability to function as an antioxidant. The synthetic form is labeled "D, L" while the natural form is labeled "D" and the synthetic form is only half as active as the natural form.

    What foods provide vitamin E?

Vegetable oils, nuts, green leafy vegetables, and fortified cereals are common food sources of vitamin E in the U.S. .

New England Journal of Medicine found that 400 IU's of vitamin E per day reduced heart attacks by nearly 50%.

The Harvard Medical Letter now recommends vitamin E as a supplement.
