Barbecued Squash

1 zucchini, sliced into 1/2 inch rounds
1 yellow squash, sliced into 1/2 inch rounds
1 medium eggplant, sliced into 1/2 inch rounds

3 Tbsp balsamic vinegar
2 cloves garlic, crushed
1 Tbsp virgin olive oil
1/4 cup chopped green onion
pinch or more of black pepper

Combine marinade ingredients in a large bowl & blend. Add vegetables to marinade & mix. Barbecue turning regularly until golden brown on each side. Brush with extra marinade often. When cooked, remove the squash slices from the barbecue & toss with any remaining dressing.
Serving Suggestion: Sprinkle with the chopped green onion & serve immediately.

Serves 6. 3/4 cup per serving.
