8 ounces penne pasta, dry
4 Tbsp grated Parmesan cheese

4 Tbsp flavored vinegar
3 cups raw spinach, ready-to-serve (pick stems, wash leaves & pat dry)
2 ripe tomatoes, cored & diced
1 tsp virgin olive oil or canola oil
1 tsp minced garlic
1 cup sliced mushrooms
1 cup broccoli florets
1 Tbsp chopped fresh basil
1/2 onion, chopped
1/2 cup vegetable or chicken broth, low sodium
pinch or more of black pepper
Cook pasta according to directions. Drain. Meanwhile, heat a large frying pan over medium-high heat. Add the olive oil & saute the garlic & onion about 3 minutes until golden. Add the mushrooms & saute 2 minutes. Add the broccoli & broth & bring to a boil. Cook for a minute or two, then add the rest of the ingredients, including the pasta.
Serving Suggestion: Serve immediately or chill.

Serves 4. 1-1/2 cups per serving.
