4 medium potatoes, cut into 1/2" cubes
2 tsp minced garlic
2 cups chicken broth
2 cups water
1 tsp virgin olive oil
1 cup onion, chopped
1 bay leaf
3/4 tsp thyme
1/2 cup sliced green onions
Heat oil in large sauce pan over medium heat. Saute garlic & onions until lightly browned. Add potatoes, broth, garlic, bay leaf & bring to a boil. Reduce heat to medium low & simmer for 20 minutes until the potatoes are tender. Cool slightly.
One cup at a time, coarsely process the soup in a food processor or blender. Do not over process. Reheat.
Serving Suggestion:
Top with chopped green onion & thyme.
Serves 4. 1-1/2 cups per serving.
