Salad:
8 oz skinless white cooked organic chicken meat
6 cups romaine lettuce
2 cups cooked jasmine rice
1 mild chili pepper, seeded & sliced
1 large ripe tomato, diced
1/2 cucumber, sliced
Dressing:
3 Tbsp balsamic or other flavored vinegar
1 Tbsp virgin olive oil
pinch or more of black pepper
Add ingredients for the salad in a large salad bowl with lettuce on the bottom. Cover; refrigerate up to one day. Add ingredients for dressing & toss before serving.
Serving Suggestion:
Serve immediately.
