4 boneless skinless organic chicken breast halves
4 Tbsp. Parmesan cheese
2 Tbsp. all-purpose flour
1 cup nonfat plain yogurt
3/4 cup plain bread crumbs
1 tsp. paprika
Pinch of cayenne pepper
Place organic chicken breast halves in yogurt & refrigerate. Mix the rest of the ingredients together in a medium mixing bowl. Preheat oven to 425º. Lightly spray a cookie tray with vegetable oil.
Generously coat each piece of organic chicken with yogurt & mix in crumb mixture, pressing down on both sides & turning over several times for a thick coat of crumbs. Place organic chicken on tray & lightly spray the top with vegetable cooking oil spray. Bake breasts for 15-20 minutes or until chicken forked juices run clear.
Serving Suggestion:
Top with sliced jalapeno peppers.
Serves 4. 1/2 breast per serving.
