3 cups cooked jasmine rice
2 Tbsp cup chopped peanuts
2 Tbsp light soy sauce
1 tsp vegetable oil
1 clove garlic, crushed
1 cup sliced bell pepper
1 carrot, sliced
1 onion, chopped
1 cup broccoli florets
1/2 cup mushrooms
Heat the oil in a large frying pan over medium high heat. Saute the garlic until golden brown then add the peppers, carrots & onions. Saute until crisp tender then add the mushrooms & broccoli. Cook briefly then add the peanuts & soy sauce.
Serving Suggestion:
Stir serve hot over cooked jasmine rice.
Serves 4. 1-1/2 cups per serving.
