12 ounces dried fruit mixture (peaches, apples, raisins, dried plums, cranberries, apricots...etc.)
2 Tbsp apple juice concentrate
1 tsp ground ginger
1 tsp ground cinnamon
1/2 tsp lemon zest
1/2 cup peeled & diced green apple
1/8 cup grated carrots
Place all ingredients in a medium pot & add two inches of water. Cover & cook over low heat, stirring occasionally, about 30-40 minutes until apples & carrots are soft.
