1-1/2 teaspoons vegetable oil
1 tablespoon chopped garlic
2 cups chopped onion
1 pound frozen crinkle cut carrots
12 ounces dry lentils (1-1/2 cups)
4 cups low-salt V8
5 cups water
1/2 teaspoon chili powder
1/2 teaspoon cumin
1 teaspoon dried oregano

Place the vegetable oil in a large soup pot. Heat over medium-high heat. Add garlic & onion & saute about 2-3 minutes until golden.
Add the rest of the ingredients & mix well. Bring to a boil then simmer. Cook uncovered about 35-45 minutes until the lentils are tender.
Serving Suggestion: Serve hot & top with parmasian cheese.

Serves 8. 1 cup per serving.
