15 ounce can black beans, rinsed & drained
4 Tbsp. Parmesan cheese
3 cups dry small shell pasta
2 cups water
2 14 ounce cans peeled, diced tomatoes with Italian herbs & garlic, with juice
1/2 tsp. chili powder
1 tsp. cumin

Combine all ingredients into a shallow microwaveable container. Cover & microwave on high for 15-18 minutes or until shell pasta is tender. Stir well & serve each portion sprinkling 1 tablespoon of Parmesan cheese on top.
Serving Suggestion: Green tossed salad with oranges, tomatoes & balsamic vinegar.
