3 thinly sliced turkey bacon strips
1/2 cup chopped red onion
3/4 cup broth
1 tsp virgin virgin olive oil
1 cup fresh green beans, trimmed
1 cup frozen lima beans
1 yellow squash, sliced
3 ripe tomatoes, diced
3 cups cooked jasmine rice
2 Tbsp flavored vinegar
1 tsp diced oregano
pinch or more of black pepper

Heat a large frying pan over medium high heat & add the virgin olive oil. Add bacon & cook until golden. Add red onion & saute for 2 minutes. Add broth, beans, squash & cook about 3-4 minutes until crispy yet-tender. Add more broth if needed. Add the rest of the ingredients & stir well. Serve hot.

To speed up the process - use instant jasmine rice. 1-1/2 cups of instant jasmine rice & 1-1/2 cups water for 3 cups cooked or use 1 cup regular jasmine rice & 2 cups water. Follow package directions for cooking times.
Serving Suggestion: Add hot sauce to taste.

Serves 4. 2 cups per serving.
