    Summary:

  • Elevated blood levels of homocysteine is a risk factor for heart disease
  • Subjects at risk for cardiovascular disease were monitored with a self-selected diet or a prepared meal plan fortified with at least 100% of the RDA for 23 vitamins and minerals
  • With the prepared meals only, serum homocysteine declined, which was associated with increased intake of folate and vitamins B12 and B6

    Conclusion:
    Fortified meals resulted in higher blood levels of folate and vitamin B12, and lower homocysteine in people with cardiovascular risk factors
