Going from a 1700 calorie intake to a 3000 calorie per day intake is not a good idea short term.
It is a good goal to shoot for, gradually over the next six months to one year, however.
I think you should keep your diet the way it is, adding only the protein source or Lean Machine to it.
The reason you are losing upper body mass is because you have not been lifting enough weight to make your muscles grow. You should lift enough weight, so that you will fail after 8-10 reps, and only do this two sets. This will stimulate your muscles to respond and grow bigger and stronger.
Eating carbs immediately after the workout is far less of a problem than eating them a few hours later. Have you carbohydrate-containing meal as soon as you finish your workout.
I find it hard to believe that you are not eating anything else in between that meal and 3 am! Why so late? Work or play?
Unless you have this type of schedule for work, you should get to bed earlier, and I believe you'll find better overall results.
