Lost weight, what to do now?

originally weighing around 205pounds, i now weigh about 170. have lost 5 inches from my waist and about two inches on my chest. to lose the weight, i went on a 1700 calorie diet and did 30mins of cardio a day and also weight lifting every two days. while this diet has worked for me, i am pretty sure it has slowed down and stopped working now. i have lost a lot of mass from my waist down and also on my arms, however i still pretty much have a pretty large chest/stomach area which i wish to reduce. i currently take no supplements or anything of that sort, and am considering whey protein (sns of course!), however i am not too sure what to do to lose a bit more weight, or what supplement to use.

one idea was to go on a 2900/3000 calorie diet which has a fair amount of protein and from this i would gain more muscle. this diet is split up into 5 or 6 meals, two of these being a protein shake. while still doing the cardio daily, i probably would not gain any fat and in fact burn fat, but also gain muscle? lifting weights for 3 months on a 1700 calorie diet has not gained me much muscle mass (toned up a bit and a slight amount of arm muscle, but nothing spectacular) and maybe if i start eating more and continue with my same workouts, they would be more efficient?

one habit that i currently have is eating a fair few carbohydrates at night. i workout at about 8pm and a few hours after i will normally eat fruit, bread and so forth (i do go to bed at around 3am though). is this a bad idea? should i change my late night meals to protein based ones?

the last question is what type of product would i be wanting to boost protein. i was looking at sns lean machine, seems like a decent idea for my situation.
