You will eventually reach some theoretical maximum food intake. The only other variable that you can control is how much energy you spend.
You can actually achieve more muscle gain by doing fewer sets of higher resistance. If doing all of the workout routines that the muscle mags describe aren't doing it for you, maybe it's time to switch to two sets of eight, and limit your workouts to less than one hour.
If you can't fatigue the targeted muscles in an hour, you either aren't working with enough weight, or you're taking to long of a rest between sets.
The less time you spend in the gym, the more calories left over. Remember, you must have a surplus of calories to build tissue.
You are correct in assuming that MOST weight gainers are high in sugar; but not all of them.
